History
Maraş dondurması is a thick, chewy ice cream of goat's milk, sugar, salep and mastic, so firm that it is beaten with long paddles and can be cut with a knife and eaten with a knife and fork. It comes from Kahramanmaraş in south-east Türkiye. Salep, the flour of wild orchid tubers from the surrounding mountains, gives it its stretch, and in the past snow brought down from the mountains was used to freeze it. Sellers in Istanbul and tourist towns play tricks on customers, handing them the cone and pulling it back on a long rod. Real salep is now scarce and protected, so it is expensive.
