History
Laz böreği is a sweet pastry of thin, buttered layers of yufka dough filled with a thick milk custard, baked and then soaked in syrup. It takes its name from the Laz people of the eastern Black Sea coast, around Rize and Artvin, who call it paponi, and it is especially associated with Rize. It is closely related to the Greek galaktoboureko, and the two are part of a shared tradition of custard pastries in the region. It is served warm or cold, cut into squares, often for holidays and to guests. Black Sea families have their own recipes for how sweet and thick the custard should be.
