History
İskender kebap carries the name of the man credited with it: İskender Efendi, who ran a restaurant in Bursa in the second half of the 19th century. The usual story says he turned the meat spit upright, so lamb could roast vertically and be shaved off in thin slices, an idea behind döner kebab. In his dish the slices are laid over cubes of pide bread, covered with hot tomato sauce and sizzling butter poured at the table, and served with thick yogurt. The family still runs a restaurant in Bursa, and the name İskender is registered to them, so many places elsewhere call it Bursa kebap.
