History
Mantı are tiny dumplings of thin dough filled with spiced minced meat and onion, boiled and served with garlic yogurt, then drizzled with butter melted with red pepper and dried mint. Kayseri, in central Anatolia, is the most famous mantı city, and its dumplings are so small that, people say, forty should fit in one spoon, and a bride was judged by how small she made them. Dumplings came to Anatolia with Turkic peoples from Central Asia, and the dish is related to the manti of Uzbekistan and the mandu of Korea. The Kayseri version has a registered geographical indication. Making it at home is still a family task.
