History
Boyoz is a small round pastry of thin, oily layers, made from flour, sunflower oil and a little tahini, and baked until crisp. It is the breakfast of İzmir and nowhere else in Türkiye is it so common. It came with the Sephardic Jews who were expelled from Spain in 1492 and settled in the Ottoman Empire, and İzmir's community made it their own; its name is linked to the Spanish bollo, a bun. The best-known story credits the Jewish baker Avram Usta, who spread it in the city in the early 20th century. İzmirlis eat it with a hard-boiled egg and a glass of tea, and İzmir boyozu has a registered geographical indication.
