History
Kumru is a sandwich in a soft, sesame-covered bun, filled with grilled sucuk, a spicy beef sausage, plus cheese, tomato and pickles, and pressed until hot. The name means collared dove, from the shape of the original bread. It comes from İzmir, where it appeared in the mid-20th century, and the Çeşme peninsula west of the city is famous for its version made with bread that contains chickpea sourdough. It became a quick lunch for the port city's workers and is now sold everywhere in İzmir, often with ayran. The two classic İzmir street foods, boyoz and kumru, are a point of local pride.
