History
Tantuni is beef or lamb cut into very small pieces, first boiled and then stir-fried with cottonseed oil, tomato, onion and pepper flakes on a wide, shallow metal pan called a sac, then wrapped in thin lavaş bread with parsley, onion and sumac. The cook warms the bread on top of the cooking meat to soak up its juices. It comes from Mersin, the port city on the Mediterranean, where it was a cheap and filling lunch for port and market workers. It is now one of the most popular street foods in Türkiye. In 2017, Mersin tantunisi received a registered geographical indication.
