History
Künefe is a dessert of shredded kadayıf pastry layered with a soft unsalted cheese that melts and stretches, baked in a small round metal pan until crisp and golden, then soaked in syrup and topped with pistachios. It is served very hot. The same dessert, knafeh, is eaten across the Arab world, especially in the Levant. In Türkiye, Hatay, the province of Antakya near the Syrian border, is its home, and the local cheese is key; Hatay künefesi has a registered geographical indication. After the 2023 earthquakes that destroyed much of Antakya, many künefe makers reopened in temporary shops or other cities.
