History
Lahmacun is a round of very thin dough spread with minced lamb or beef, onion, tomato, peppers, parsley and spices, then baked hot and fast in a stone oven. The name comes from the Arabic lahm bi ajin, "meat with dough", and the dish has old roots across the Levant and Mesopotamia, eaten in Syria, Lebanon and among Armenians as well. In Türkiye it is the street food of the south-east, especially Şanlıurfa, Gaziantep and Adana, where it is spicier with isot pepper. Diners squeeze lemon over it, add parsley and onion, roll it up and eat it by hand.
