History
Etli ekmek, "bread with meat", is a very long, thin flatbread topped with minced lamb or beef, onion, tomato and peppers, and baked quickly in a stone oven. It is the signature dish of Konya, the city in central Anatolia famous for the poet and Sufi mystic Rumi. Konya's version is longer and thinner than lahmacun, and the topping is spread to the very edges of the dough, then cut into pieces for sharing. It is eaten as a main meal with ayran and onions. Bakeries in Konya prepare the dough and topping when the customer orders, and Konya etli ekmeği has a registered geographical indication.
