History
Pide is a boat-shaped flatbread baked in a wood-fired oven with a filling of minced meat, cheese, egg or other ingredients, and the Black Sea region is its most famous home. Pide makers from towns such as Samsun's Bafra and Terme, and from Trabzon, opened pide shops across Türkiye, especially in Istanbul. Each place has a style: Bafra pide is long and thin, and closed pide (kapalı) has the edges folded over the filling, while open pide shows the topping. The Trabzon style is often topped with butter and egg broken into the middle when it comes out of the oven. It is eaten with ayran and pickles.
