History
Simit is a ring of bread dipped in grape molasses and covered with sesame seeds, then baked until crisp and dark brown outside and chewy inside. It is the breakfast of Istanbul, sold from red carts and from trays balanced on sellers' heads, and eaten on the way to work or on the ferry with tea, cheese and olives. Records from the city show simit being made in Istanbul at least since the 16th century, and Ottoman court registers mention it. Each city has its own version: in İzmir it is called gevrek, and Ankara's are smaller and crisper. Seagulls following the Bosphorus ferries are often fed pieces of simit.
