History
İmam bayıldı means "the imam fainted". It is a whole aubergine, split and stuffed with a large amount of onion, garlic and tomato, then slowly simmered in olive oil and eaten cold or warm. It belongs to the family of zeytinyağlı dishes, vegetables cooked in olive oil, which are served at room temperature across Türkiye and the former Ottoman lands. Stories explain the name differently: an imam fainted from pleasure at the taste, or fainted when he learned how much expensive olive oil his wife had used. The dish is a classic of Istanbul and Aegean home cooking and of meyhane, taverns that serve meze.
