History
Ali nazik is a home-style dish of Gaziantep in south-east Türkiye: aubergines are charred over coals until the skin is black and the flesh smoky, then mashed with garlicky yogurt, and topped with cubes of lamb sautéed in butter and drizzled with more butter. A legend says it was created in the 16th century when Sultan Selim I passed through the region and was served the dish, and the name was taken from the words of praise, but this cannot be confirmed. Gaziantep, which UNESCO named a Creative City of Gastronomy in 2015, has a rich food culture based on aubergines, pistachios and red pepper.
