History
Sarde in saor are fried sardines layered with onions slowly cooked in vinegar, with pine nuts and raisins, and left to rest for a day or more. Saor means flavour in Venetian dialect. The method was a way to preserve fish on long sea voyages, and the sweet-and-sour taste and the raisins and pine nuts reflect the trade with the East that made Venice rich. It is a classic of the Venetian cicchetti, small snacks served in bacari, wine bars, with a glass of wine, and it is eaten especially at the Festa del Redentore in July, when Venetians dine on boats on the lagoon.
