History
Orecchiette, "little ears", are small, round, slightly hollow pieces of pasta made by hand from durum wheat semolina and water. They are the pasta of Apulia, in the heel of Italy. In the old town of Bari, women still make them at tables outside their homes on a lane known as Strada dell'Arco Basso, dragging each piece with a knife and turning it over the thumb. The classic dish is orecchiette con le cime di rapa, with turnip greens, garlic, chilli, olive oil and anchovies. Some writers link the shape to similar pasta from Provence or to the Angevin rulers of the Middle Ages, but its origins are uncertain.
