History
Olive all'ascolana are large green olives, pitted in a spiral, stuffed with a mixture of beef, pork and chicken cooked in wine, with cheese and nutmeg, then breaded and fried. They come from Ascoli Piceno in the Marche region, where the local large, mild olive, Ascolana tenera, has been grown since Roman times. The stuffed version is credited to cooks working for noble families in the 19th century, who looked for a way to use leftover meat. They are served as a starter or street snack in paper cones, often with fried lamb chops and custard in a mixed fry. Ascoli holds an olive festival each summer.
