History
Arrosticini are small skewers of mutton or lamb, cut into tiny cubes and grilled on a long, narrow brazier called a furnacella, which looks like a gutter. They are the signature food of Abruzzo and come from the shepherds of the area south-east of the Gran Sasso mountain, between the provinces of L'Aquila, Teramo and Pescara, who used meat from older sheep. They are seasoned only with salt and sometimes olive oil, and they are eaten by the dozen, pulled off the skewer with the teeth, with bread drizzled with oil and a glass of Montepulciano d'Abruzzo wine. Butchers and grills across the region sell them.
