History
'Nduja is a soft, spreadable pork sausage, deep red with Calabrian chilli, made from pork fat, trimmings and offal, smoked and aged for months. It comes from Spilinga, a village in the province of Vibo Valentia in Calabria, which holds a festival for it every August. The name is often linked to the French andouille, a sausage brought, people say, by the French occupation in the early 19th century or the earlier Angevins, though the Calabrian product is very different. It was a way to use every part of the pig. It is spread on bread, melted into pasta sauces or on pizza, and became fashionable in restaurants abroad in the 2010s.
