History
Canederli, called Knödel in German, are large dumplings made from stale bread soaked in milk and bound with egg and flour, mixed with speck, cheese, spinach or liver. They come from Trentino and South Tyrol, the Alpine region of northern Italy where German and Italian are both spoken, and are related to the dumplings of Austria and Bavaria. Frescoes in the chapel of Castel d'Appiano (Hocheppan), near Bolzano, painted around 1200, show a woman eating dumplings, often cited as the oldest image of them. They are served in clear broth or dry with melted butter and cheese, and they were a way for mountain families to use every scrap of bread.
