History
Lasagne alla bolognese is the Emilian version of an old idea: wide sheets of pasta layered with sauce and baked. In Bologna the sheets are fresh egg pasta, often green with spinach, layered with ragù, a slow-cooked sauce of minced beef and pork with a little tomato, and béchamel, and topped with Parmigiano Reggiano. Layered pasta dishes were written down in Italian cookbooks of the Middle Ages. The Bologna chamber of commerce registered an official recipe in 2003 to fix what locals consider the real thing. It is Sunday and feast-day food in Emilia-Romagna.
