History
Frico is cheese, usually Montasio, cooked in a pan with potatoes and often onion until it forms a thick, golden cake, crisp outside and soft inside. It is the most typical dish of Friuli, in north-eastern Italy, and it began as a way for poor mountain families of Carnia to use up cheese rinds and leftovers. A thin, crisp version made from cheese alone is also served as a snack. Recipes for fried cheese close to frico are credited to Maestro Martino, the 15th-century cook of the Patriarch of Aquileia's chamberlain. It is eaten with polenta and is still cooked in country inns of the region.
