History
Pastiera is a Neapolitan Easter tart of shortcrust pastry filled with wheat grains cooked in milk, ricotta, eggs, candied fruit and orange-flower water, topped with a lattice of pastry strips. It is baked in the days before Easter and is said to taste best after a few days of rest. Its ingredients, wheat and eggs, are linked to spring and new life, and one legend credits it to nuns of the convent of San Gregorio Armeno. Another legend says the siren Parthenope, the mythical founder of Naples, received the ingredients as gifts. Families in Naples make several and give them to relatives and neighbours.
