History
Piadina, or piada, is a thin flatbread of wheat flour, lard or olive oil, salt and water, cooked on a hot terracotta or iron plate. It comes from Romagna, the eastern part of Emilia-Romagna with Rimini, Ravenna, Forlì and Cesena. It was the bread of the poor in the countryside, and the poet Giovanni Pascoli called it the "national bread" of the people of Romagna. Kiosks along the Adriatic coast sell it folded around prosciutto, squacquerone cheese and rocket, or sausage and greens. It is thicker in the north of Romagna and thinner around Rimini. Piadina romagnola has had protected geographical status in the European Union since 2014.
