History
Panettone is a tall, domed sweet bread from Milan, made with a long-rising sourdough and enriched with butter, eggs, raisins and candied citrus peel. It is the Christmas cake of Italy. Several legends explain the name, the most famous saying that a kitchen boy named Toni saved a ruined dessert at the Sforza court in the 15th century, creating pan de Toni; there is no record to support it. What is clear is that Milanese bakers made it a Christmas speciality, and in the 20th century industrial bakeries such as Motta and Alemagna turned it into a national product. Making the dough takes several days.
