History
Ossobuco means "bone with a hole": cross-cut slices of veal shank braised slowly with white wine, broth and vegetables. The prize is the marrow in the centre of the bone. It is a Milanese dish, and the older version, ossobuco in bianco, has no tomato and is flavoured with cinnamon and bay leaf, finished with gremolada, a mix of lemon zest, garlic and parsley. The modern, better-known version adds tomatoes, carrots and celery. In Milan it is served with risotto alla milanese, the saffron risotto, which makes it one of the few Italian dishes where rice is served as a side to meat.
