History
Culurgiones are Sardinian filled pasta, closed with a distinctive pleat that looks like an ear of wheat. In Ogliastra, on the east coast of Sardinia, they are filled with potato, pecorino or local cheese, mint and garlic, and served with tomato sauce and grated cheese. The wheat-ear closure is made by hand, pinching the dough from side to side, and it is a skill passed down in families. They were traditionally made for the Day of the Dead and other holidays, and were offered as a wish for good luck and a good harvest. Since 2015, culurgionis d'Ogliastra have had protected geographical indication status in the European Union.
