History
Cannoli are tubes of crisp fried pastry filled with sweetened sheep's milk ricotta, often with chocolate, candied fruit or pistachio at the ends. They come from Sicily, and many writers trace them to the area of Palermo and Caltanissetta in the period of Arab rule, when sugar cane was grown on the island, though the story is hard to prove. They were traditionally made for Carnival. The shells were once fried wrapped around pieces of river cane, which gave them their name. Palermo decorates them with candied orange, and Catania prefers pistachios. Proper cannoli are filled just before eating so the shell stays crisp.
