History

Saffranspannkaka, also called Gotland pancake, is a dessert from the Baltic island of Gotland; in the local Gutnish dialect it is saffranspannkake. Despite the name it is not a pancake but a baked rice pudding cake. Its ingredients are short-grain porridge rice, cream, milk, sugar, eggs, chopped almonds and saffron, which gives it a deep yellow colour. It is eaten lukewarm or cold, and by tradition it is served with salmbärssylt, jam made from dewberries, and with whipped cream. The saffron and almonds make it richer than an everyday rice pudding, and its own names in the Gutnish dialect show its roots on the island.
