History
Köttbullar are small meatballs of minced beef and pork with onion, breadcrumbs soaked in milk, and white pepper, fried in butter and served with cream sauce, boiled or mashed potatoes, lingonberry jam and pickled cucumber. A popular story says King Charles XII brought the idea back from the Ottoman Empire in the early 1700s; Sweden's official account repeated this in 2018, though food historians have doubts. Meatballs first appear in a Swedish cookbook in 1754 and became common in homes in the 19th century, when meat grinders spread. Swedish home cooking gave them their sweet-sour sides.
