History
The kanelbulle, Swedish cinnamon bun, is a yeasted wheat dough spiced with cardamom, rolled with a filling of butter, sugar and cinnamon, twisted into a knot or spiral, and sprinkled with pearl sugar. Cinnamon buns appeared in Sweden after the First World War, when sugar and butter became more easily available again, and spread in the 1950s with home baking. They are the most common partner for fika, the Swedish coffee break. In 1999 the home baking council declared 4 October Kanelbullens dag, cinnamon bun day.
