History
Fish and chips comes from two traditions that met in the 19th century: fried fish brought to London by Jewish immigrants from Portugal and Spain, and fried potatoes sold in the industrial north. The first fish-and-chip shops opened in the 1860s; London and Lancashire both claim the first, with Joseph Malin in east London often named. Railways and steam trawlers made fresh fish cheap across the country, and by the early 20th century there were tens of thousands of shops. During both world wars the government kept them supplied. It is eaten with salt, malt vinegar and mushy peas, ideally by the sea.
