History
Matoke, or matooke, is green cooking bananas, peeled, wrapped in banana leaves and steamed for hours, then mashed into a soft yellow mound. It is the staple food of Uganda, especially in the Buganda kingdom around Kampala and in the west. Uganda grows more cooking bananas than almost any other country, and in Luganda the word for food, emmere, often means matoke. It is eaten with groundnut sauce, beans, meat stews or luwombo. Matoke is so central that families judge a meal incomplete without it. The East African Highland banana has been grown in the Great Lakes region for many centuries.
