History
Luwombo is a stew of chicken, beef, fish or groundnuts with mushrooms, wrapped in smoked young banana leaves and steamed in a pot. The leaves give the stew a smoky flavour and keep in the juices. It comes from the Buganda kingdom in central Uganda, where tradition dates it to 1887, at the court of Kabaka Mwanga II, and it was long reserved for kings and princes. Today it is served at weddings, introductions and Christmas, and it is a sign of respect for guests. Each luwombo is a small parcel served one per person, often with matoke and other staples. Preparing the leaves over a fire is an art in itself.
