History
Shakshouka is eggs poached in a sauce of tomatoes, peppers, onion and garlic, spiced with cumin and harissa, cooked and served in the same pan. The name is often linked to a Berber or Arabic word for a mixture. It is widely held to come from Tunisia and the Maghreb, though many countries in North Africa and the Middle East make it. In Tunisia it can also include merguez sausage or potatoes. Tunisian Jews who moved to Israel took it with them, where it became a famous breakfast. Bread is used to wipe the pan clean.
