History
Lablabi is a chickpea soup with garlic, cumin and harissa, poured over pieces of stale bread at the bottom of a bowl. The diner tears the bread into the bowl, and the cook adds broth, chickpeas, olive oil, capers, a soft-boiled egg and sometimes tuna on top. It is a cheap and filling breakfast for workers, sold in small cafés in Tunis and across the country in the cold months. The name relates to an Arabic word for chickpeas. Each stall has its own mix of spices, and customers mix it themselves at the table until the bread is soaked through.
