History
Brik is a triangle or half-moon of very thin malsouka pastry, folded around a filling and fried quickly until crisp. The classic is brik à l'œuf: a whole raw egg with tuna, capers, parsley and onion, fried so the yolk stays runny, a challenge for whoever eats it without spilling it. Its name and form are related to the Ottoman börek, and it is thought to have arrived during the Ottoman period. It is a common starter in Tunisian homes and restaurants, served with lemon, and it is especially part of the evening meal during Ramadan, when brik is eaten to break the fast.
