History
The name joins two Thai words: tom, to boil, and yam, a mixed salad dressed sharply with lime, chilli and fish sauce. The soup tastes the way the name sounds. Lemongrass, galangal and kaffir lime leaves are bruised and boiled, then lime juice, fish sauce and fresh chillies go in off the heat, most famously with river prawns in tom yum goong. Central Thailand, with its rivers full of prawns and fish, is its home. There are two main styles: clear (nam sai), and creamy (nam khon), made richer with milk or chilli paste. It is one of the dishes Thai people most often name as their own.
