History
Khao soi is the noodle soup of northern Thailand: egg noodles in a coconut curry broth, topped with a nest of crispy fried noodles and served with pickled mustard greens, shallots and lime. Its origin is usually traced to the Chin Haw, Muslim traders from Yunnan in China who drove mule caravans through the hills between China, Burma and Thailand. The Burmese soup ohn no khao swè, with coconut and noodles, is a close relative and probably a parent. Chiang Mai is its stronghold, where many well-known shops are run by Muslim families, and a chicken or beef bowl is a common lunch.
