History
Pad thai is younger than many people think. Stir-fried rice noodles came to Thailand with Chinese migrants, but the dish called "Thai-style fried noodles" was promoted in the late 1930s and 1940s by the government of Field Marshal Plaek Phibunsongkhram. It wanted a national dish, more use of rice noodles, and more people earning a living from food stalls. The recipe settled on rice noodles fried with egg, tofu, dried shrimp, tamarind, palm sugar, fish sauce and peanuts, with bean sprouts and lime. Bangkok hawkers made it famous, and it became the first Thai dish many foreigners ever ate.
