History
Mandazi are triangular or round pieces of slightly sweet dough, often flavoured with coconut milk and cardamom, deep-fried until puffed and golden. They come from the Swahili coast of East Africa, where Indian Ocean trade brought spices such as cardamom. In Tanzania and Kenya mandazi are eaten for breakfast with sweet spiced tea, chai, or as a snack at any time, and they are sold from baskets at bus stations and markets. During Ramadan they are part of the evening meal to break the fast. In Zanzibar, coconut mandazi are especially popular. They keep well and are carried by travellers on long journeys.
