History
Kachumbari is a fresh salad of chopped tomatoes, onions and chilli, dressed with lime juice and salt, and sometimes coriander, cucumber or avocado. It is served on the side of almost everything in Tanzania and Kenya: grilled meat, pilau rice, chipsi mayai and fried fish. The name comes from the Indian cachumber, a similar salad brought by Indian traders and workers who settled on the East African coast. It cools the palate next to spicy or fatty dishes. In Tanzania, kachumbari with pilau is a classic combination at weddings and celebrations. It takes minutes to make and is sold in small bags at street grills.
