History
Chipsi mayai, "chips and eggs", is an omelette cooked with French fries, made in a pan where beaten eggs are poured over hot chips and fried until set. It is eaten with kachumbari salad, tomato sauce and pili-pili hot sauce. The dish was invented on the streets of Dar es Salaam and is now Tanzania's most popular street food, sold from evening stalls in towns and villages all over the country. It is filling and cheap, and it is often called the unofficial national dish. Some versions add sausage or vegetables. It is also known as zege. Chips stalls light up city corners after dark, and the smell of frying potatoes draws customers.
