History
Lu rou fan, braised pork rice, is finely chopped or minced pork belly simmered in soy sauce, rice wine, sugar and spices such as five-spice, often with fried shallots, until the fat and skin turn soft, then spooned over a bowl of white rice. It was a frugal way to stretch a small amount of pork, and it became the everyday food of Taiwan, sold in small shops and night markets and eaten at any time of day. Southern Taiwan uses the name differently, and many families make their own version at home. Taiwanese often describe it as the taste of home.
