History
Bubble tea, zhēnzhū nǎichá, is sweet milk tea shaken with ice and chewy balls of tapioca drunk through a wide straw. Taiwan had a craze for shaken iced tea in the 1980s. Two tea houses claim to have added the tapioca first: Chun Shui Tang in Taichung, whose product manager is said to have put tapioca balls into her tea at a meeting in 1987, and Hanlin Tea Room in Tainan. The two went to court over it, and the court did not decide who was first. Bubble tea spread across Asia in the 1990s and around the world in the 2000s, with many flavours and toppings.
