History
Beef noodle soup, niúròumiàn, is Taiwan's signature noodle dish: thick wheat noodles in a deep broth of slowly braised beef, often red-braised with soy sauce, chilli bean paste and spices, topped with greens and pickled mustard. Its story is tied to the soldiers and families who came from mainland China after 1949. Many say it was first made in the military villages of Kaohsiung by veterans from Sichuan, who adapted their chilli bean paste. Since the 1990s, Taipei has held a beef noodle festival, and every cook claims a different secret for the broth. Clear, unbraised versions also exist.
