History
Lamprais comes from the Dutch lomprijst, a packet of rice. It is rice cooked in meat stock, with a mixed meat curry, frikkadels (meatballs), a sambol, fried aubergine and a boiled egg, wrapped in a banana leaf and baked. It was created by Sri Lanka's Burghers, people of mixed Dutch, Portuguese and Sri Lankan descent, whose ancestors arrived when the Dutch East India Company controlled the island's coast from 1658 to 1796. Burgher families serve it for celebrations and Sunday lunches, and bakeries in Colombo sell it ready to eat, with the banana leaf giving the rice its smell.
