History
Hoppers, appa in Sinhala and appam in Tamil, are bowl-shaped pancakes made from a fermented batter of rice flour and coconut milk, cooked in a small round pan so the edges are thin and crisp and the centre soft. Egg hoppers have an egg cooked in the middle. Similar pancakes exist in south India, and they are recorded in Tamil literature from long ago. In Sri Lanka, hoppers are an evening and breakfast food, sold at roadside stalls in the late afternoon and eaten with sambol, a fiery mix of coconut, chilli and onion, or with curry. String hoppers, steamed noodle nests, are a related dish.
