History
Kottu, or kottu roti, is godamba roti, a thin flatbread, chopped on a hot griddle with vegetables, egg, spices and meat or cheese, and mixed with curry gravy. It is made with two metal blades hammered rhythmically on the hot plate, and the clatter of the blades announces a kottu shop in every Sri Lankan town at night. It started in the east of the island, in the towns of Batticaloa and Trincomalee, among the Sri Lankan Moor community, and its name comes from the Tamil koththu, chopped. It has become the most popular late-night street food in Sri Lanka, made in many versions.
