History
Saleeg is white rice cooked slowly in chicken or meat broth and then in milk, stirred until it turns soft and creamy, and served on a large round tray with roasted chicken or lamb on top and a pool of melted ghee. It comes from the Hejaz, the western region of Saudi Arabia, and the city of Taif in particular, where it is often called the regional national dish. People compare its texture to risotto. It is a dish of family gatherings and celebrations, including the evenings before Ramadan, and it is now eaten across the country and in other Gulf states. Saleeg is usually served with a sharp tomato and chilli sauce, or with pickles, to balance its richness.
